Groundnut ladoo/ peanut ladoo

PEANUT LADOO/GROUND NUT LADOO

(Easy and quick protein packed ladoos with only  2 ingredients)

Ingredients:

1. 1 cup roasted peanut (without skin)

2.1/2 cup crushed jaggery

3. water or milk 1 tblsp.(optional)

METHOD:

Rub the 1cup peanuts with your hands and blow away the skin.
Then take the peanuts into the blender and give a quick grind as fine as possible.It will be slightly coarse only.
Now add jaggery and then grind it again.
Transfer this to a bowl.Mix well and break the lumps formed.
shape them into small sized/lemon sized balls.oil in peanuts is just enough to hold together.
That's it...serve as a snack......

Notes: you can skip the (water / milk )if the oil released from peanuts are enough to roll them.

SPICY GARLIC PUFFED RICE/POONDU KAARA PORI

Spicy garlic puffed rice / poondu kaara pori
Kaara pori is one of my best & favourite snack recipe. It is easy to prepare and it's taste is very delicious and also low in calories.This puffed rice snack is better than the packed chips and junks.


Ingredients:

*  Puffed rice/pori -- 2 cups
*  Garlic -- 5-6 pods(cut it into a small piece)
*  Curry leaves a handful
*  Turmeric powder --1/2 tsp
*  Asafoetida/hing -- 1pinch
*  Chilli powder & salt to taste
*  Coconut oil -- 1tblsp


Method:

*  Heat coconut oil in a kadaai.add garlic pieces and fry it in a medium low flame,till it become golden in colour.
*  Then add curry leaves,chilli powder,turmeric powder,hing,saute it one minute.
*  Then add 2 cups of puffed rice/pori and toss it until coated well.That's it.
*  Cooled it completely and store it in airtight container and enjoy as tea / coffee time snack.


Notes:
*  Garlic should get fried well to lend a nice flavour.so fry well until become golden in colour.
*  Adjust spice levels as per your taste.
*  The measures are your choice,If you like Peanuts,Roasted channa dal(pottu kadalai) then add it for your taste.

HOMEMADE TOMATO SAUCE/ TOMATO KETCHUP

Homemade Tomato sauce



Ingredients:


* 1/2 kg full ripe Tomatoes
*  2 tsp kashmiri red chilli powder
*  2 tblsp sugar
*  2 tsp vinegar / lemon juice.
*  Salt to taste

METHOD


*  Firstly, clean the tomatoes.
*  Take 2 cups of water add the tomatoes,put it on the stove and  boil for 3 to 4 minutes.
*  Cool down the tomatoes completely, & transfer to the blender or mixie.
*  Puree the tomatoes without any water and keep it aside.
*  Extract the tomato puree by using a strainer. It's separating seeds and skin of tomatoes.
*  Then put the puree on the stove,boil the mixture well.
*  Further continue to boil atleast 10 minutes.
*  Add chilli powder, salt, sugar.
*  Keep stirring till the tomato puree thickens.
*  Finally mix well and add vinegar or lemon juice,as they act as preservative.
*  Cooled it completely,That's it.Transfer the tomato sauce or tomato  ketchup in the air tight container.
* Store it in fridge for months.

BADAM PISIN WITH ELAICHI FLAVOURED MILK

Badam Pisin With Milk/How to use Badam Pisin[Almond Gum]/Badam Pisin – natural body coolant
Badam pisin or Almond gum is an edible gum collected from badam/almond trees. Badam tree bark secretes the gum and it gets dried up, which is later collected and used for medicinal purposes. They look like little rocks which are white in colour and an excellent natural body coolant. The famous drink of Tamil Nadu - Jigarthanda, Rose milk etc are prepared by adding Nannari sarbat to the badam pisin. The badam pisin is soaked overnight in water which then becomes like jelly; this jelly can then be used along with sarbats.  Badam Pisin is a natural jelly which can be consumed by everyone to beat the heat and keep the body cool. This is badam pisin milk is an easy and simple home remedy during the hot summer days.
Here’s how to make Badam Pisin Milk with step by step photos…


Ingredients

Badam Pisin/Almond Gum- 2 or 3
Water  -1 to 1 ½ cups
Milk -1 cup [boiled & cooled]
Sugar- 1 tsp
Elachi/Cardamom powder [optional] -One pinch
( Vanilla icecream )optional


Method


This is how Badam pisin/almond gum looks like…
Soak the badam pisin in water overnight.
It looks like jelly the next day morning.
Scoop out 3 spoons of jelly to a cup, add milk, sugar, elachi powder mix well and enjoy.
Serve with scoop of vanilla icecream.

Groundnut Chutney or Peanut Chutney Recipe


 This protein rich peanut chutney is made regularly at home for breakfast like Ragi roti, Chapati, Wheat dosa, Wheat Parota, Ragi dosa. This is made without coconut and is thick, creamy and tastes delicious. There are so many ways for peanut chutney, I am sharing the one which i love most.

Peanuts are rich in energy (567 calories per 100 g) and contain health benefiting nutrients, minerals, antioxidants and vitamins that are essential for optimum health.

Groundnut Chutney or Peanut Chutney Recipe

Ingredients for peanut chutney:



  • 100 grams roasted peanuts groundnuts
  • 100 grams big / small onions
  • 3 - 4 green chillies
  • Salt as needed
  • 1/4/cup of water.


Instructions

  1.  Add groundnut to a blender and grind it coarsely powder.
  2. Then add peeled big / small onions, green chillies, salt, and water and grind it to a smooth paste.
  3.  If you want spicy chutney add more green chilies to your taste while grinding the chutney. Now Traditional style Ground nut chutney is READY to serve with Rotis..


Notes:


  • It's highlight is raw Onions & green chillies.
  • You can make the peanut chutney thick or medium consistency.
  • Quickest chutney one can make in just few minutes.
  • Serve peanut chutney with chapati, wheat dosa, wheat parotta,  Ragi dosa & Ragi roti.
  • This chutney is the best combination of all types of Rotis.

HOW TO MAKE PEANUT CHUTNEY OR GROUNDNUT CHUTNEY WITH STEP BY STEP PHOTO

  1. In a blender, add groundnuts I had brought roasted groundnuts otherwise you can buy and dry roast at home (until it turns golden).
  2. Grind it coarsely.
  3.  Then add onion, green chilli, salt and water and grind it to a smooth paste.
  4. Now, our Peanut chutney is Ready to serve it goes well with Ragi Roti.
